A list of our favorite recipes, the dishes we go back to again and again. We add to this collection as we remember or come across new things we love. During our year in Spain, I didn’t have cookbooks, so I looked to the internet more for recipes (and fell back on my staples). I’d like to expand my repertoire of cooking blogs, since I know there are so many great cooks out there who have blogs. Hopefully we’ll take a few cooking classes someday too!
SOUPS
- Potato Leek.
- Minestrone.
- Spinach Garbanzo.
- Chicken Soup.
- Vegetable Stock to accompany any soup.
ROASTS AND CASSEROLES
- Eggplant Parmesan. I especially like the recipe for individual ones on Italian Food Forever.
FISH
- Marisa’s Lubina a la Espalda. Can be made with sea bass or any similar fish.
- Sole with Grapes and Capers.
MEAT
- Chicken Breast with Onion and Bay Leaves. From Juanjo’s Mom.
- Pechugas Empanadas. Also from Marisa!
VEGETABLES
- Pisto. A favorite of Juanjo’s.
