Marisa’s Lubina a la Espalda

I am helping my mother-in-law make this for the second time today, and reminded how delicious it is. Definitely a recipe to try at home. Lubina is “bass” fish.

Ingredients:

  • 2 potatoes
  • 1/2 onion
  • 1 cup olive oil
  • 1 spoon bread flower
  • 1/2 cup vinager

Directions:

Preheat oven 200 degrees C.

Prepare oven pan with tin foil.

Dice onion, heat oil and fry onion a little bit. When it’s almost done, remove from heat and put one spoon of bread flower. Add 1/2 cup vinegar and a little bit of salt. Add a little bit of water to the sauce.

Slice potatoes thinly, salt and fry a little (halfway). Remove potatoes and spread over oven pan.

Place fish on top of potatoes, salt all over, pour sauce over the whole mixture. Add a little more water. Salt and pepper.

Bake about 40 minutes.
